4 Medium Sized Chicken Breasts
½ Cup No Sugar Added Salsa
½ Tablespoon of RPH’s Taco Seasoning http://www.readyprepheal.com/?p=888 OR any Gluten Free Taco Seasoning
ENCHILADA INGREDIENTS
8oz Full-Fat Plain Cream Cheese
½ Cup No Sugar Added Salsa
1 ½ Cups Shredded Cheddar Cheese
¼ Cup Full-Fat Sour Cream
2 Cans Gluten Free Enchilada Sauce
12 Grain and Gluten Free Tortillas

ASSEMBLY
- In a crockpot pour in salsa and top with chicken breasts. Sprinkle taco seasoning on top of the chicken. Cook on low for 6 – 8 hours. Chicken is done when it easily shreds apart.
- Shred chicken and add to a large mixing bowl.
- Combine chicken, salsa, ½ cup of cheddar and sour cream. Mix well.
- In a large baking dish or two small sized dishes pour enchilada sauce to evenly coat the bottom.
- Working in batches, place 2 tortillas on a plate and top with a wet paper towel. Microwave for 10 – 15 seconds. This prevents the tortillas from breaking when filling and forming your enchiladas. This step is worth it.
- Place a large spoonful of the enchilada mixture into each tortilla and place in your baking dish. Cover your rolled enchiladas with a wet paper towel to prevent the tortillas from breaking while you assemble your additional enchiladas.
- When your enchiladas are complete, cover with remaining enchiladas sauce and top with shredded cheddar.
- Bake at 375° Fahrenheit for 30 – 35 minutes or until cheese is melted and sides begin to bubble.
- Let cool for 5 minutes, cut and serve.
