SWEET POTATO CRISP INGREDIENTS
1 Sweet Potato Sliced into Thin Rounds
2 Tablespoons of Avocado Oil
¼ Teaspoon Chili Powder
¼ Teaspoon Paprika
¼ Teaspoon Garlic Powder
½ Teaspoon Himalayan Salt
SALAD INGREDIENTS
5oz Container Arugula
¼ Sliced Red Onion
¾ Honeycrisp Apple Cut into Strips
¾ Cup Roasted Walnuts
SALAD DRESSING INGREDIENTS
2 Tablespoons Dijon Mustard
2 Tablespoons White Wine Vinegar
½ Teaspoon Himalayan Salt
½ Teaspoon Minced Garlic
¼ Cup Avocado Oil
SWEET POTATO ASSEMBLY
- In a small bowl mix together chili powder, garlic powder, paprika, and salt to make potato crisp seasoning.
- Place sweet potato rounds in a large baggie with avocado oil and seasoning. Seal the bag and evenly coat all the fries with the avocado oil and half of the seasoning.
- Place rounds in the air fryer at 370° Fahrenheit. Depending on the size of your air fryer, you may need to bake in batches. Do not overlap sweet potato rounds because they will not get crispy.
- Bake for 15 – 20 minutes shaking the basket and flipping the rounds every few minutes until desired crispness.
SALAD ASSEMBLY
- In a small mixing bowl make the salad dressing by whisking together the Dijon, vinegar, salt, garlic, and avocado oil.
- In a large mixing bowl add the arugula, onion, apple, walnuts, and dressing. Mix well.
- Prepare your plates by distributing an even amount of salad on each, and surround each salad with potato crisps.

Walnuts: Contain cancer fighting properties that help reduce the risk of prostate and breast cancer.
