SALAD INGREDIENTS
1 Celery Root, Peeled and Cut into Strips
1 Honeycrisp Apple Cut into Strips
¼ Cup Red Onion Diced
1 Cup Cilantro Loosely Chopped
¼ Cup Pine Nuts Toasted
SALAD DRESSING INGREDIENTS
2 Tablespoons Dijon Mustard
2 Tablespoons White Wine Vinegar
½ Teaspoon Himalayan Salt
½ Teaspoon Minced Garlic
¼ Cup Avocado Oil
ASSEMBLY
- In a small mixing bowl make the salad dressing by whisking together the Dijon, vinegar, salt, garlic, and avocado oil.
- In a large mixing bowl add the celery root, apple, red onion, cilantro, and dressing. Mix well.
- Prepare your plates by distributing an even amount of salad on each, and top with pine nuts.
