INGREDIENTS
¼ Cup Grass-fed Butter
1 Large Yellow Onion Diced
1 Tablespoon Minced Garlic
¼ Cup Cassava Flour
4 Cups Chicken Bone Broth or Vegetable Broth for Vegetarian
5 – 6 Cups Broccoli Cut into Bite-Size Pieces
1 Cup Carrots Shredded
1 Teaspoon Himalayan Sea Salt, More to Taste
1 Teaspoon Cracked Black Pepper, More to Taste
1 Teaspoon Paprika
1 Teaspoon Dry Mustard
4oz Full-fat Plain Cream Cheese, Cut into Small Cubes
16oz Shredded Cheddar
4 Cups Heavy Whipping Cream
ASSEMBLY
- In a large soup pot melt butter.
- Add onion and garlic, sauté until translucent.
- Mix in cassava flour until onions are fully coated.
- Add broth to the soup pot.
- Add broccoli and carrots. Simmer on low for 40 minutes.
- Add soup mixture to a high speed blender and blend until desired vegetable consistency.
- Put blended mixture into a slow cooker and set on low.
- Add salt, pepper, paprika, and dry mustard.
- Slow cook on low for 3 hours.
- Add cream cheese, cheddar, and heavy cream. Mix well.
- Slow cook on low for an additional hour, stirring occasionally.
- Taste and adjust seasoning if needed.
- Garnish with additional cheese or broccoli, and serve.
