FLATBREAD INGREDIENTS
2 Cups Almond Flour
1 Tablespoon Baking Powder
1 Teaspoon Garlic Powder
2 Pasture-Raised Eggs
2 ½ oz Full-Fat Cream Cheese
3 Tablespoons Heavy Whipping Cream
3 Cups Shredded Cheddar
1 Teaspoon Himalayan Salt
1 Tablespoon Butter Melted
1 Fresh Jalapeno, Pitted. One half diced, and the other half thinly sliced.
BACON SCALLION CHEESE DIP INGREDIENTS
8oz Full-Fat Plain Cream Cheese Softened
4 Sliced of Bacon Cooked and Finely Diced
2 Tablespoons Scallions Finely Diced
FLATBREAD ASSEMBLY
- In a large mixing bowl combine almond flour, baking powder, and garlic powder. Mix well.
- In a medium sized sauce pan on low heat add heavy whipping cream and cream cheese. Whisk until cream cheese is melted, add cheddar and mix well with a spatula.
- With an electric mixer combine the eggs, the cheese mixture, and the diced jalapenos.
- Once the cheese, jalapenos, and eggs are fully mixed, slowly add the dry ingredients and mix well.
- If making two small flatbreads, divide into 2 portions. Otherwise, keep as one.
- Place dough on a large non-stick lined cookie sheet and form a ¼ inch thick flatbread formed into the shape of a rectangle.
- Brush the top of the flatbread(s) with the melted butter.
- Lightly press all over the flatbread(s) with your finger to form small indents. Cover with sliced jalapeno by lightly pressing each slice into the dough.
- Bake at 425°F for 20 – 22 minutes rotating the cookie sheet often.
- Let cool on a wired rack.
BACON SCALLION CHEESE DIP ASSEMBLY
- In a medium sized mixing bowl combine cream cheese, bacon, and scallions. Mix well.
- Serve with the flatbread.
