INGREDIENTS
1 Medium Sized Butternut Squash Neck Cut into 1” Chunks
1 Tablespoon Grass-fed Butter
1 Tablespoon Minced Garlic
1 Teaspoon Balsamic Vinegar
¼ Cup Shallots Sliced
½ Teaspoon Thyme
1 Teaspoon Himalayan Salt
¼ Teaspoon Cracked Black Pepper
3 Tablespoons Heavy Whipping Cream
2 Tablespoons Pine Nuts Toasted
ASSEMBLY
- In a medium sized mixing bowl combine the squash, thyme, salt, pepper, and avocado oil. Mix well until each squash is coated with the avocado oil and seasoning.
- In a small frying pan on medium low heat, melt butter and sauté the garlic, shallots, and balsamic until shallots are translucent.
- Add shallots to the squash and mix well.
- Place squash on a medium sized baking dish and bake at 375° Fahrenheit for 25 minutes.
- In a food processor combine the roasted squash with the heavy cream and process until it is fluffy like mashed potatoes.
- Top with pine nuts, and butter if desired.
