INSTANT POT SHREDDED CHICKEN INGREDIENTS
2 Chicken Breasts
1 Cup Salsa
CASSEROLE INGREDIENTS
½ Cup Sliced Green Onions
6oz Full-fat Plain Cream Cheese Softened
¾ Cup Cauliflower Rice
1 Cup Shredded Cheddar
1 Jalapeno Pitted, One Half Sliced, Other Half Diced
- In an instant pot add chicken and pour 1 cup of salsa over the chicken.
- Set instant pot to poultry setting, and release steam as soon as it’s done cooking.
- Shred chicken and add to a large mixing bowl along with the green onions, cream cheese, cauliflower rice, and diced jalapeno.
- In a small baking dish add the casserole mixture and top with shredded cheddar and sliced jalapenos.
- Bake at 350°F for 45 Minutes.
