FRIED CAULIFLOWER RICE INGREDIENTS
16oz Cauliflower Rice
1 Teaspoon Minced Garlic
2 Tablespoons Tamari
1 Tablespoon Avocado Oil
½ Cup Green Onion Sliced
2 Pasture-Raised Eggs Scrambled
CHICKEN INGREDIENTS
3 Free-Range Chicken Breast Cut into 1” Cubes
1 Cup Cassava Flour
2 Pasture-Raised Eggs
¼ Cup Avocado Oil
3 Tablespoons of Monk Fruit Sweetener
¼ Cup No Sugar Added Ketchup
½ Cup White Vinegar
2 Tablespoons of Gluten Free Tamari
2 Tablespoons of Surkin Gold Brown Sugar Alternative
1 Teaspoon Minced Garlic
Garnish with Sliced Green Onion and Cilantro
CAULIFLOWER ASSEMBLY
- In a large mixing bowl combine cauliflower, garlic, tamari, avocado oil, green onions, and eggs.
- Mix well and place in a medium sized baking dish.
- Set aside until chicken is ready to be baked.
CHICKEN ASSEMBLY
- In a medium sized mixing bowl add cassava flour.
- In a separate medium sized mixing bowl add eggs and whisk together.
- In a large frying pan add avocado oil.
- Working in batches, dip chicken into the flour to fully coat,and then into the egg mixture. Place each piece of chicken in your frying pan.
- Place the frying pan over medium low heat and pan fry until lightly browned. Some of the egg and flour mixture will fall off the pieces of chicken, discard the egg and flour pieces.
- In a small mixing bowl whisk together the monk fruit sweetener,ketchup, vinegar, tamari, brown sugar alternative, and minced garlic.
- In a medium sized baking dish add the chicken and pour half of the sauce over the chicken.
- Bake the chicken and cauliflower rice at 375°F for 60 minutes,stirring continuously. After 45 minutes pour the remaining sauce over the chicken and bake for an additional 15 minutes stirring often.
- Serve Chicken with Cauliflower Rice.
