INGREDIENTS
4 Sweet Potatoes
6 Slices of Bacon, Cooked and Crumbled
½ Cup Full-fat Sour Cream
2 Tablespoons Full-fat Heavy Whipping Cream
1 Tablespoon Green Onions Diced
½ Cup Shredded Cheddar
1 Teaspoon Minced Garlic
Himalayan Sea Salt to Coat
Avocado Oil to Coat
ASSEMBLY
- In a medium sized baking dish, bake sweet potatoes at 350°F for 60 minutes.
- Cut the sweet potatoes in half and scrape the sweet potato out of the peel.
- In a medium sized mixing bowl, mix together the sweet potato, sour cream, heavy whipping cream, and garlic.
- Brush each potato skin with avocado oil and salt.
- Fill each potato with the sweet potato mixture and bake at 375°F for 15 minutes.
- Top each potato with bacon and cheddar, and cook for an additional 10 minutes.
- Top with green onions, and serve.

Sweet Potatoes: Contain vitamin A and C which are both antioxidants that reduce inflammation. Vitamin A is fat-soluble,which means having your sweet potatoes with a healthy fat (avocado oil, coconut oil, etc.) will help you absorb even more vitamin A.
Bacon: A source of choline, which is important for liver function, brain development, nerve function and muscle movement.
