INSTANT POT SHREDDED CHICKEN INGREDIENTS
4 Chicken Breasts
1 Cup Chicken Broth
CASSEROLE INGREDIENTS
160z Cauliflower Rice
1 Head Broccoli Cut into Bite Size Pieces
½ Cup Onion Diced
1 Cup Shredded Cheddar
1 Tablespoon Minced Garlic
1 ½ Cups Chicken Broth
CHEESE SAUCE INGREDIENTS
1 Cup Shredded Cheddar
¼ Cup Chicken Broth
½ Cup Full-fat Sour Cream
½ Cup Full-fat Heavy Whipping Cream
8oz Full-fat Plain Cream Cheese
1 Teaspoon Himalayan Sea Salt
ASSEMBLY
- In an Instant Pot add chicken broth and chicken breasts.
- Set instant pot to poultry setting, and release steam as soon as it’s done cooking.
- Shred chicken and add to a large mixing bowl.
- In a large sauté pan over medium low heat add chicken broth, garlic, onion, broccoli, and cauliflower. Cover over medium low heat for 5 – 7 minutes.
- Make the cheese sauce while the vegetables are cooking.
- In a medium sized sauce pan over medium low heat add chicken broth, heavy cream, and sour cream. Whisking continuously. Once the broth and creams are hot, combine cream cheese in batches and whisk continuously.
- Once the sauce thickens add salt and cheddar cheese. Whisk until cheese is melted and sauce has thickened.
- In a large mixing bowl combine chicken, vegetable mixture, and cheese sauce. Mix well and place in a medium sized glass baking dish.
- Top with 1 cup shredded cheddar.
- Bake at 375°F for 40 Minutes.
