PRIME RIB INGREDIENTS
4 LBS Grass-fed Rib Roast
¼ Cup Dijon Mustard
1 Tablespoon Minced Garlic
1 Tablespoon Rosemary
1 Tablespoon Thyme
4 Tablespoons Grass-fed Butter Melted (Ghee for Whole 30)
Himalayan Sea Salt
Cracked Pepper
2 Cups Beef Broth
2 Cups Red Wine
Prepared Horseradish for Serving
AU JUS INGREDIENTS
1 ½ Cups Beef Broth
¼ Cup Red Wine
½ Tablespoon Worcestershire (Skip for Whole 30)
ASSEMBLY
- Let roast sit out for 1 -2 hours to get to room temperature.
- In a small mixing bowl combine mustard, garlic, and butter.
- Set roast in a large roasting pan.
- Cover generously with salt and pepper.
- Pour mustard mixture all over the rib roast.
- Cover with rosemary and thyme.
- Bake at 450°F for 20 minutes.
- Reduce heat to 350°F and cook until internal temperature reads 115° – 120°F (for medium rare) using a meat thermometer.
- Remove roast from pan and lightly cover with a piece of aluminum foil. Let sit for 20 minutes.
- For planning purposes, it will typically take 15 minutes per pound, in addition to 20 minutes of resting time.
- While prime rib is resting, make au jus.
- Place roasting pan with drippings on the stove over medium low heat. Add beef broth, wine, and Worcestershire.
- Whisk continuously.
- Slice prime rib and serve with au jus and horseradish.
