INGREDIENTS
1 Tablespoon Grass-fed Butter
¾ Cup Frozen Spinach Chopped
1 Cup Yellow Onion Diced
½ Tablespoon Minced Garlic
8 Thinly Sliced Deli Ham (Gluten Free, Uncured)
4 Pasture Free Range Eggs
¼ Cup Heavy Whipping Cream
1 Cup Shredded Cheddar
Salt and Pepper
4 Ramekins
ASSEMBLY
- In a medium sized frying pan melt butter on medium low heat and add the garlic, onions, and spinach. Pan fry 5 minutes.
- Line each ramekin with 2 slices of ham.
- Place a quarter of the spinach mixture in each ramekin in top of the ham.
- Crack one egg in each ramekin, top with 1 Tablespoon of heavy whipping cream, and ¼ cup shredded cheddar cheese.
- Place ramekins on a cookie sheet and bake at 350° F for 25 minutes.
