CHICKEN INGREDIENTS
1 Free-Range Whole Chicken 4 – 4 ½ LBS
Avocado Oil to Coat
2 Tablespoons Paprika
2 Tablespoons Himalayan Salt
3 Teaspoons Cracked Pepper
½ Tablespoon Rosemary
½ Teaspoon Cayenne Pepper
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
1 Tablespoon Thyme
½ Onion Cut into Wedges
ARTICHOKE AND TOMATO INGREDIENTS
2 Cups Artichokes Chopped
1 Tablespoon Avocado Oil
1 Teaspoon Minced Garlic
2 Cups Grape Tomatoes Chopped
½ Teaspoon Himalayan Sea Salt
½ Teaspoon Italian Seasoning
2 Tablespoons Fresh Basil Chopped
2 Teaspoons Balsamic Vinegar
ASSEMBLY
- In a medium sized mixing bowl combine paprika, salt, pepper, rosemary, cayenne, garlic, onion powder, and thyme. Mix well.
- Coat all sides of the chicken with avocado oil, and then the seasoning.
- Place onions in the bottom of a slow cooker.
- Place chicken breast side up in the slow cooker.
- Cook on low for 7 hours.
- Baste chicken with the juices in the crock pot to discard all of the seasoning that is sitting on top of the chicken.
- Cook for 1 more hour.
- In a medium sized mixing bowl combine artichokes, oil, garlic, tomatoes, salt, Italian seasoning, basil, and vinegar. Mix well.
- Place in a medium sized glass baking dish and bake at 375° F for 30 minutes.
- Top chicken with artichoke and tomato mixture.
