INGREDIENTS
3 ½ Cups Shredded Chicken
4 oz Full-Fat Plain Cream Cheese
1 ½ Cups Salsa Verde
½ Cup Cilantro Chopped
¼ Cup Heavy Whipping Cream
½ Cup Full-Fat Sour Cream
½ Poblano Pepper Chopped
1 Teaspoon Himalayan Sea Salt
1 Teaspoon Minced Garlic
¼ Cup Onion Diced
8 Grain Free Tortillas
1 Cup Shredded Cheddar Cheese

ASSEMBLY
- In a food processer combine cream cheese, ½ cup salsa, cilantro, heavy cream, sour cream, poblano, salt, garlic, and onion.
- In a large mixing bowl combine cream cheese mixture and shredded chicken. Mix well.
- Pour ½ cup of salsa to evenly coat the bottom of a large baking dish.
- Divide chicken mixture into 8 portions, fill and roll each tortilla. Place rolled tortilla in the baking dish. Cover your rolled enchiladas with a wet paper towel to prevent the tortillas from breaking while you assemble your additional enchiladas.
- When your enchiladas are complete, cover with ½ cup salsa and top with shredded cheddar.
- Bake at 375° F for 40 minutes or until cheese is melted and sides begin to bubble.
- Let cool for 5 minutes, cut and serve.
