DRESSING INGREDIENTS
2 Tablespoons Lemon Juice
2 Tablespoons Dijon Mustard
3 Tablespoons Red Wine Vinegar
3 Teaspoons Monk Fruit Sweetener
1 Teaspoon Italian Seasoning
½ Teaspoon Parsley
1 Teaspoon Minced Garlic
½ Cup Avocado Oil
¼ Teaspoon Celery Seed
Salt and Pepper to Taste
SALAD INGREDIENTS
1 Large Head Green Leaf or Romaine Lettuce Chopped
½ Cup Sliced Red Onion
1 Cup Grape Tomatoes Sliced
1 Cup Gluten Free and Uncured Ham Cubed
¾ Cup Gluten Free and Uncured Salami Cut into Strips
¾ Cup Fresh Mozzarella Balls *Eliminate if Whole30 or Paleo
5 Large Basil Leaves Chopped
ASSEMBLY
- In a small mixing bowl make the dressing by whisking together lemon juice, mustard, vinegar, sweetener, Italian, parsley, garlic, oil, celery seed, salt and pepper. Mix well.
- In a large salad bowl add the lettuce, onions, tomato, ham, salami, mozzarella, basil, and half of the dressing.
- Coat entire salad well. Taste, and add more dressing if necessary.
- Serve.
