CHICKEN INGREDIENTS
1 Whole Chicken 4 – 4 ½ LBS
1 Onion Cut into Large Pieces
3 Tablespoons Minced Garlic
1 Tablespoon Lemon Juice
1 Tablespoon Red Wine Vinegar
2 Tablespoons Avocado Oil
1 ½ Tablespoons Oregano
1 Tablespoon Parsley
½ Tablespoon Dill
1 Teaspoon Himalayan Salt
3 Tablespoons Dijon Mustard
SAUCE INGREDIENTS
1 English Cucumber
1 Cup Almond Yogurt
2 Teaspoons Minced Garlic
1 Tablespoon Lemon Juice
1 Teaspoon Dill
½ Teaspoon Parsley
¼ Teaspoon Himalayan Salt
¼ Teaspoon Pepper
1 Tablespoon Red Onion Diced
SALAD INGREDIENTS
Romaine Chopped
Grape Tomatoes Sliced
Red Onion Sliced
ASSEMBLY
- In a food processer process the cucumber, and place in a medium sized mixing bowl. Eliminate liquid.
- Add almond yogurt, garlic, lemon juice, dill, parsley, salt, pepper, and red onion to the cucumbers. Mix well and refrigerate.
- In a medium sized mixing bowl combine garlic, lemon juice, red wine vinegar, oil, and mustard. Mix well.
- Place onions in the bottom of a slow cooker.
- Place chicken breast side up in the slow cooker.
- Pour sauce over chicken.
- In a small bowl combine oregano, parsley, and dill.
- Spread over chicken.
- Cook on low for 7 hours.
- Baste chicken with the juices in the crock pot to discard all of the seasoning that is sitting on top of the chicken.
- Cook for 1 more hour.
- Cut chicken and serve with lettuce, onion, tomatoes, and cucumber sauce.
