12 Pasture Free Range Eggs
¾ Cup Onion Diced
¾ Cup Green Pepper Diced
½ Cup Grape Tomatoes Diced
½ Cup Mushrooms Diced
¼ Cup Fresh Basil Diced
1 Cup Ham Diced (Gluten Free, Uncured)
¼ Teaspoon Himalayan Salt
½ Teaspoon Cracked Pepper
ASSEMBLY
- Preheat Oven to 350° Fahrenheit
- In a large mixing bowl whisk together the eggs, onions, peppers, tomatoes, mushrooms, basil, ham, mushrooms, salt, and pepper.
- Line a muffin pan with muffin / cupcake liners.
- Fill each liner with the egg mixture.
- Bake for 35 minutes.
