FISH MARINADE INGREDIENTS
1LB of White Fish Cut into 2 Inch Strips
½ Cup Full-fat Heavy Whipping Cream
2 Free-Range Egg Yolks
½ Tablespoon Chili Powder
¼ Teaspoon Paprika
½ Teaspoon Himalayan Salt
¼ Teaspoon Garlic Powder
¼ Teaspoon Coriander
¾ Teaspoon Cumin
FISH BREADING INGREDIENTS
3/4 Cup Blanched Almond Flour
½ Tablespoon Chili Powder
½ Teaspoon Paprika
1 Teaspoon Himalayan Salt
½ Teaspoon Garlic Powder
¼ Teaspoon Onion Powder
½ Teaspoon Coriander
1 ½ Teaspoons Cumin
Avocado Oil for Pan Frying
CILANTRO SOUR CREAM INGREDIENTS
1 Cup Full-fat Sour Cream
2 Cups Loosely Packed Cilantro
1 Teaspoon Minced Garlic
½ Tablespoon Lime Juice
½ Teaspoon Cumin
¼ Teaspoon Himalayan Salt
TOMATO RADISH PICO INGREDIENTS
1 ½ Cups Grape Tomatoes Diced
½ Cup Cilantro Finely Diced
2 Tablespoons Red Onion Diced
½ Tablespoon Lime Juice
¼ Cup Radishes Diced
Himalayan Salt and Cracked Pepper to Taste
FISH MARINADE ASSEMBLY
- In a medium sized mixing bowl combine cream, yolks, chili powder, paprika, salt, garlic powder, coriander, and cumin.
- Mix well and marinate fish for at least 6 hours.
CILANTRO SOUR CREAM INGREDIENTS
- In food processor combine sour cream, cilantro, garlic, lime juice, cumin, and salt.
- Process until smooth.
- Refrigerate until ready to serve.
PICO INGREDIENTS
- In a medium sized mixing bowl combine tomatoes, cilantro, onion, lime juice, radishes, salt, and pepper.
- Combine and refrigerate until ready to serve.
FISH BREADING INGREDIENTS
- In a medium sized mixing bowl combine almond flour, chili powder, paprika, salt, garlic, onion powder, coriander, and cumin.
- In a cast iron skillet or large frying pan, add avocado oil to coat the bottom.
- Heat on low until warm.
- With a large tongs, remove fish from the marinade and coat with breading.
- Pan fry 2 minutes on both sides, and set aside on a plate lined with a paper towel.
- Work in batches.
- If oil becomes too black, discard and use new oil.
- Serve breaded fish with sour cream and Pico on a gluten and grain free tortilla.
