INGREDIENTS
1 English Cucumber Chopped
1 Yellow Bell Pepper Chopped
1 Bunch Radishes Chopped
¾ Cup Red Onion Diced
2 Tablespoons Fresh Dill Chopped
½ Cup Loosely Packed Fresh Mint Chopped
1 Cup Loosely Packed Parsley Chopped
2 Teaspoons Za’atar Seasoning
2 Tablespoons Avocado Oil
3 Tablespoons Full-fat Heavy Whipping Cream
1 Teaspoon Minced Garlic
2 Tablespoons Red Wine Vinegar
¼ Teaspoon Himalayan Sea Salt
Top with Pistachios (Optional)
ASSEMBLY
- In a small mixing bowl combine za’atar, avocado oil, cream, garlic, vinegar, and salt. Whisk well.
- In a large bowl combine cucumber, yellow pepper, radishes, onion, dill, mint, parsley, and dressing.
- Mix well and top with pistachios.
