CHICKEN INGREDIENTS
2 Chicken Breasts Cut into 2” Chunks
½ Teaspoon Smoked Paprika
½ Teaspoon Himalayan Salt
¼ Teaspoon Cayenne Pepper
½ Teaspoon Cumin
½ Teaspoon Thyme
¼ Teaspoon Onion Powder
½ Teaspoon Garlic Powder
½ Teaspoon Oregano
AVO to Coat
PICO INGREDIENTS
1 Cup Grape Tomatoes Diced
½ Cup Peach Diced
2 Tablespoons Red Onion Diced
¼ Cup Cilantro Finely Chopped
½ Teaspoon Minced Garlic
½ Tablespoon Red Wine Vinegar
1 Tablespoon Avocado Oil
Himalayan Salt and Cracked Pepper to Taste
ASSEMBLY
- In a medium sized bowl add tomato, peach, onion, cilantro, garlic, vinegar, AVO, salt and pepper. Mix well.
- In a small mixing bowl combine paprika, salt, pepper, cumin, thyme, onion powder, garlic powder, and oregano. Mix well.
- Coat the chicken breast with avocado oil, then coat each side with the seasoning mixture.
- Thread the chicken onto each skewer.
- Preheat the grill to 450° F.
- Grill the chicken for 4 minutes.
- Flip the chicken and grill for an additional 4 minutes.
- Plate the chicken, and top with Pico.
