INGREDIENTS
1LB Grass-fed Ground Beef
1 Cup Onions Diced
1 Tablespoon Chili Powder
½ Teaspoon Paprika
1 Teaspoon Himalayan Salt
½ Teaspoon Garlic Powder
¼ Teaspoon Onion Powder
½ Teaspoon Coriander
1 ½ Teaspoons Cumin
1 ½ Cups Salsa – No Sugar Added
15oz Enchilada Sauce
1 ½ Cups Shredded Monterey Jack
9 Grain and Gluten Free Tortillas
ASSEMBLY
- In a large frying pan brown the beef on medium low heat, and add onions. Cook until translucent.
- Drain grease.
- In a small mixing bowl combine chili powder, paprika, salt, garlic powder, onion powder, coriander and cumin.
- Add the taco seasoning, ¼ cup of water and salsa to your beef.
- Mix well.
- In a medium sized bowl mix together the enchilada sauce and 1 cup of salsa.
- In a medium sized baking dish spread ½ cup of the enchilada sauce and salsa.
- Layer with 3 Tortillas to cover the sauce.
- Top with 1 Cup of the beef mixture, and ½ cup of the enchilada sauce and salsa.
- Continue layering.
- Top with cheese.
- Bake at 350° F for 30 minutes.
Top with lettuce, onion, tomato, cilantro, jalapenos, cheese and sour cream.
