INGREDIENTS
4 Tablespoons Grass-fed Butter Melted
2 Cups Walnuts
1 Tablespoon Granular Monk Fruit Sweetener
1 ½ Teaspoons Cinnamon
½ Cup White Wine Vinegar
1 Teaspoon Oregano
1 Tablespoon Dijon Mustard
1 Teaspoon Himalayan Salt
¼ Teaspoon Cracked Pepper
2 Teaspoons Minced Garlic
2 Tablespoons Red Onion Finely Diced
18 Drops Liquid Monk Fruit
½ Cup Avocado Oil
1 Large Head of Romaine or 3 Romaine Hearts Chopped
2 Granny Smith Apples Chopped
¾ Cup Gorgonzola Crumbles More to Taste
¾ Cup Blueberries
¼ Cup Red Onion Diced
ASSEMBLY
- In a medium sized bowl mix the walnuts, butter, granular monk fruit, and cinnamon.
- Place the walnuts on a cookie sheet and bake at 300° F for 35 minutes.
- In a small mixing bowl make the dressing by whisking together the vinegar, oregano, Dijon, salt, pepper, garlic, red onion, liquid monk fruit and AVO oil.
- In a large salad bowl add romaine, apples, ½ the cheese, blueberries, red onion, and half the dressing.
- Coat well with the dressing and add more if needed.
- Top with remaining cheese and serve.
