DRESSING INGREDIENTS
2 Teaspoons Minced Garlic
¼ Cup Avocado Oil
¼ Cup Red Wine Vinegar
½ Teaspoon Oregano
Salt and Pepper to Taste
SALAD INGREDIENTS
5 Pepperoncini Peppers Sliced
½ Cup Red Onion Sliced
14oz Artichoke Hearts Halved
8oz Small Fresh Mozzarella Balls *Optional*
3oz Salami Sliced
2 Cups Basil Chopped
2 Tablespoons Kalamata Olives Sliced
¼ Cup Black Olives Sliced
½ Cup Grape Tomatoes Halved
ASSEMBLY
- In a small mixing bowl make the dressing by whisking together garlic, avocado oil, vinegar, oregano, salt and pepper.
- In a large salad bowl add the peppers, onion, artichokes hearts, mozzarella, salami, basil, olives, and grape tomatoes. Mix well.
- Coat entire salad with ¾ of the dressing. Add more if needed.
- Serve.
