INGREDIENTS
2 Cups Fresh Cauliflower Rice
1LB Grass-fed Ground Beef
½ Cup Onion Diced
1 Tablespoon Minced Garlic
1 ½ Cups No Sugar Added and Gluten Free Enchilada Sauce
4oz Full-fat Plain Cream Cheese
2 Teaspoons Cumin
½ Tablespoon Chili Powder
8oz Green Chiles
1 Cup Shredded Cheddar
ASSEMBLY
- In a large sized pan over medium low heat add cauliflower, ground beef, onion and garlic. Cook until ground beef is completely cooked and browned.
- In a small sauce pan over medium low heat add enchilada sauce. Once enchilada sauce is hot add cream cheese, cumin, and chili powder. Stir until completely melted.
- Add enchilada sauce to the ground beef mixture along with the green chiles and mix well.
- Place beef mixture in a medium sized baking dish.
- Top with shredded cheddar.
- Bake at 375°F for 40 Minutes.
