SALAD INGREDIENTS
Delicata Squash Sliced and Drizzled with AVO, Salt and Pepper
Honey Crisp Apple Sliced and Drizzled with AVO and Cinnamon
5 Cups Romaine Chopped
1 Cup Walnuts Roasted
1/4 Cup Red Onions Sliced
Gorgonzola optional
2 Hardboiled Eggs
2 Chicken Breasts
DRESSING INGREDIENTS
3T AVO
1T ACV
1 Teaspoon Minced Garlic
1T Dijon
1/2 Teaspoon Salt
10 Drops Liquid Monk Fruit
CHICKEN MARINADE INGREDIENTS
3T AVO
2T ACV
2T Dijon
1 Teaspoon Worcestershire
1 Teaspoon Salt
1T Garlic
ASSEMBLY
- In a small mixing bowl combine all chicken marinade ingredients. Whisk well and marinate chicken.
- In a small mixing bowl combine all salad dressing ingredients. Whisk well and set aside.
- Heat grill to medium high heat. Grill squash and apples for a couple minutes on both sides. Grill until soft and grill marks appear.
- Raise the temp to 450° F.
- Grill the chicken for 4 minutes.
Flip and grill for an additional 4 minutes. - Dress the Romaine with the salad dressing.
- Chop chicken into slices.
- On a large serving platter layer the Romaine.
- Evenly divide and arrange the remaining salad ingredients.
