PESTO INGREDIENTS
1/2 Cup Roasted Walnuts
1 Teaspoon Minced Garlic
2 Large Handfuls of Arugula
1/2 Cup Grated Parmesan
3/4 Cup AVO
STEAK INGREDIENTS
1 LB NY Strip Steak
1/4 Cup Balsamic Vinegar
1/2 Tablespoon Worcestershire
1 Tablespoon ACV
1/2 Teaspoon Salt
1/2 Teaspoon Oregano
1/4 Teaspoon Onion Granules or Powder
1/2 Teaspoon Thyme
ASSEMBLY
- Make steak ingredients by whisking together all ingredients.
- Marinate steak. Overnight preferably or for at least 6 hours.
- Make pesto while heating grill. In a food processor add walnuts and process until crumbled.
- To the walnuts add garlic, arugula and parm. Process until almost smooth. Slowly add AVO while processing. Set aside.
- Preheat the grill to High Heat roughly 550°F.
- Place the steaks on the grill for 5 minutes, flipping only once, then grill for an additional 4 minutes on the other side for a medium rare steak. 7. Adjust cooking time based on personal preference.
- Set aside for 10 minutes to let the steaks collect their juices. Do not cover.
- Serve with pesto.
