FRENCH ONION AIOLI
1/2 Cup Mayo, Optional Recipe Below
1/2 Onion Sliced
2 Tablespoons Butter or Ghee
1 Teaspoon Minced Garlic
1/4 Teaspoon Salt
MAYO INGREDIENTS
1 Egg Room Temp
3/4 Cup AVO
1/2 Teaspoon Dijon
1/2 Teaspoon Salt
3/4 Teaspoon Lemon Juice Room Temp
BURGER INGREDIENTS
4 Slices of Swiss Optional
Salt and Pepper
1LB Ground Beef
4oz Mushrooms Sliced
2 Tablespoons Butter or Ghee
MAYO ASSEMBLY
- In a food processor add 1/4 cup oil, mustard, egg, and salt. Process until smooth and yellow.
- VERY slowly add the oil. This took me about 4 -5 minutes to add. The slower the better!! 3. Add lemon juice and process for 5 seconds.
AIOLI ASSEMBLY - In a medium sized sauce pan add ghee, garlic and onions. Heat on low and Caramelize. This takes time, stir occasionally until fully Caramelized.
- Add onions to food processor. Process until almost smooth. Add mayo and salt. Process until mixed we’ll.
BURGER ASSEMBLY - Form 8 beef patties. Top with salt and pepper.
- Place a grill pan over medium heat and add patties. Cover with foil to avoid splatter. Heat 3-4 minutes per side. Top with Swiss.
- While burgers are grilling add mushrooms and ghee to a small
Sauté pan. Heat until tender. - Plate burgers and top with aioli, mushrooms and favorite burger toppings.
