INGREDIENTS
Gluten / Grain Free Pizza Crust
1 Cup Rotisserie Chicken Shredded
1 Cup Full Fat Coconut Milk
2 Tablespoons Red Curry Paste
1 Tablespoon Arrowroot (thickener)
2 Tablespoons Cilantro Chopped
1 Teaspoon Minced Garlic
1/4 Teaspoon Salt
1/2 Cup Red Pepper Sliced
1/4 Cup Red Onion Sliced
ASSEMBLY
- In a small sauce pan over medium heat whisk together coconut milk, curry, garlic, salt, and cilantro. Bring to a boil, add arrowroot and simmer.
- Remove sauce from heat and let sit to thicken.
- Once the sauce has thickened, spread on pizza crust. Top with chicken, peppers and onions.
- Bake according to crust directions. Top with chopped cilantro to garnish.
