BARBACOA INGREDIENTS
5 LB Beef Chuck Roast
1.5 Cup Beef Bone Broth
1/2 Cup Lime Juice
1 Tablespoon Chipotle Powder
1/2 Tablespoon Garlic Powder
1/4 Cup Cumin
1/2 Teaspoon Ground Cloves
1 Tablespoon Chili Powder
1 Teaspoon Coriander
1 Teaspoon Paprika
POBLANO INGREDIENTS
2 Poblanos Halved
1.5 Cups Barbacoa
4oz Diced Green Chiles
1 Tablespoons Cilantro Chopped
Pico and Guacamole to Top!
BARBACOA ASSEMBLY
- In a large mixing bowl combine all ingredients except the beef. Mix well.
- In a large frying pan, brown all sides of meat.
- Place in a slow cooker and top with seasoning mixture.
- Cook on low for 10 hours.
- In a large bowl combine Barbacoa, chiles, and cilantro.
- Fill each poblano with Barbacoa. Freeze remaining Barbacoa for other meal options!
- Bake at 375 for 35-40 minutes.
- Add toppings and serve!
