INGREDIENTS
1 – 2 Chipotle Peppers in Adobo Sauce
2 Teaspoons Adobo Sauce
1 Teaspoon Minced Garlic
1 Egg
3/4 Cup AVO (Don’t sub!)
1/2 Teaspoon Dijon
1/2 Teaspoon Salt
3/4 Teaspoon Lemon Juice
ASSEMBLY
- In a food processor add 1/4 cup oil, mustard, egg, and salt. Process until smooth and yellow.
- VERY slowly add the oil.
The slower the better!! - Add lemon juice and process for 5 seconds.
- Add remaining ingredients. Process until smooth.
- Refrigerate until ready to serve.
