ROASTED CAULIFLOWER INGREDIENTS
1 Large Head of Cauliflower Cut into Florets
AVO
Salt
1/2 Teaspoon Garlic Powder
SOUP INGREDIENTS
1 Tablespoon AVO
1 Medium Sized Onion Diced
1/2 Tablespoon Minced Garlic
6 Cups Chicken Bone Broth
2 Tablespoons Butter or Ghee
1 Tablespoon Thyme
1/2 Teaspoon Salt
1/4 Teaspoon Onion Powder
- Drizzle cauliflower with AVO. Sprinkle with salt and garlic powder.
- Bake on a cookie sheet at 425 for 35 minutes.
- In a Dutch oven over medium high heat add AVO, onion and garlic. Sauté until onions are translucent.
- Add bone broth, bring to a boil and add cauliflower. Simmer for at least 20 minutes.
- In a high speed blender, working in batches, add soup and blend until smooth.
- Transfer back to the Dutch oven over medium low heat.
- Add ghee, thyme, salt, and onion powder. Simmer and serve.
