CELERY ROOT INGREDIENTS
1/2 Medium Sized Celery Root Peeled and Thinly Sliced
Avocado Oil to Coat
Salt
Garlic Powder
DRESSING INGREDIENTS
3 Tablespoons Avocado Oil
1/4 Teaspoon Chopped Garlic
3/4 Teaspoon Dijon Mustard
1 Tablespoon Coconut Vinegar
Salt
SALAD INGREDIENTS
3-4 Cups Baby Romaine and Arugula
Honeycrisp Apple Sliced
1/2 Cup Roasted Walnuts
1/4 Cup Red Onion Sliced
ASSEMBLY
- Coat celery root with AVO. Add a few dashes of salt and garlic.
- Air-Fry at 400 for 8-10 minutes. Until golden brown. Shake occasionally. Set on a paper towel until ready to serve.
- In a small mixing bowl combine dressing ingredients. Mix very well.
- In a large salad bowl add lettuce, walnuts, onion, and dressing. Mix until evenly dressed.
- Plate salad and top with apples and celery root crisps.
