INGREDIENTS
1 LB Ground Beef
1 Tablespoon Chili Powder
1/2 Teaspoon Paprika
1 Teaspoon Salt
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Onion Powder
1/2 Teaspoon Coriander
1.5 Teaspoon Cumin
1/4 Teaspoon Chipotle Powder
7oz Diced Chiles
1/2 Cup Diced Onion
15oz Jar of Enchilada Sauce, I used @sietefoods
10-12 Tortillas, I used @sietefoods Almond Tortillas
ASSEMBLY
- In a large skillet add ground beef, brown and crumble over medium high heat.
- Add taco seasoning, peppers, onions, 1/2 cup enchilada sauce, and water (optional) until desired texture is reached.
- In a large baking dish add 1/2 cup of enchilada sauce.
- Fill each tortilla with ground beef mixture and place in the baking dish.
- Top with remaining enchilada sauce.
- Bake at 350 for 30 minutes.
- Serve with favorite enchilada toppings.
