INGREDIENTS
2 Tablespoons Avocado Oil
1/2 Cup Diced Onion
1/2 Cup Diced Red Pepper
1/2 Cup Diced Carrots
2 Teaspoons Minced Garlic
1 Inch Block Ginger Minced
4oz Red Curry Paste
4 Cups Chicken Bone Broth
1 Can Full-Fat Coconut Milk
8oz Brown Rice Noodles Cooked According to Package
2 Cups Chicken Cooked and Shredded
Handful of Cilantro Chopped
ASSEMBLY
1. Add the oil, onion, peppers, garlic, and carrots to Dutch oven.
2. Sauté on medium heat until fragrant and translucent.
3. Add the remaining ingredients with the exception of the cilantro and noodles.
4. Bring to a boil and simmer on low for 60 minutes.
5. Add noodles and cilantro.
6. Serve!
