INGREDIENTS
3 Chicken Breasts Cut into 1” Slices
2 Tablespoons AVO
13.5oz Full-Fat Coconut Milk
4oz Red Curry Paste
1 Cup Red Onion Sliced
1 Tablespoon Minced Garlic
.5 Teaspoon Salt
1.5 Tablespoons Minced Ginger
2 Cups Broccoli Florets
Handful of Cilantro Chopped
ASSEMBLY
- In a Dutch oven over medium heat add AVO, onion, garlic and chicken. Heat all sides of the chicken.
- In a medium bowl whisk coconut milk until smooth. Add curry, broccoli, red peppers and salt.
- Mix all ingredients well and add to Dutch oven.
- Keep on medium heat for 5 minutes.
- Bake at 375 for 45 minutes. Add cilantro and serve.
- Serve with oven baked almond tortillas.
