INGREDIENTS
6 Hardboiled Eggs
3 Tablespoons Mayo (recipe below)
1 Teaspoon Dijon Mustard
1/4 Teaspoon Tabasco
1 Teaspoon Apple Cider Vinegar
Salt and Pepper to Taste
Paprika to Garnish
MAYO INGREDIENTS
1 Egg
3/4 Cup AVO
1/2 Teaspoon Dijon
1/2 Teaspoon Salt
3/4 Teaspoon Lemon Juice
MAYO ASSEMBLY
1. In a food processor add 1/4 cup oil, mustard, egg, and salt. Process until smooth and yellow.
2. VERY slowly add the oil. This takes me about 4 -5 minutes to add. The slower the better!! 3. Add lemon juice and process for 5 seconds.
DEVILED EGG ASSEMBLY
1. Cut each egg in half.
2. Scoop out the yolk and add to a small mixing bowl. Smash the yolks.
3. Add mayo, Dijon, ACV, Tabasco, salt and pepper. Mix very well until smooth.
4. Add egg mixture to a small baggie. Cut a small slit in the bottom corner. Squeeze yolk mixture into each egg white cup.
5. Chill and sprinkle with paprika before serving.
