PORK INGREDIENTS
4LBS Pork Shoulder (Pork Butt)
1.5 Cups Beef Broth
.5 Cup Lime Juice
1 Tablespoon Chipotle Powder
.5 Tablespoon Garlic Powder
.25 Cup Cumin
.5 Teaspoon Ground Cloves
1 Tablespoon Chili Powder
1 Teaspoon Coriander
1 Teaspoon Paprika
Salt / Pepper
MANGO JICAMA SLAW INGREDIENTS
1 Mango
Handful of Cilantro Finely Chopped
2 Tablespoons Red Onion Diced
1/2 Cup Jicama Diced
Splash of Lime Juice
PORK ASSEMBLY
1. In a medium sized mixing bowl add all of the ingredients except the pork, salt, and pepper. Mix well.
2. Add half of the liquid mixture to the bottom of the slow cooker.
3. Add the pork to the slow cooker.
4. Sprinkle the pork with salt and pepper, and cover with remaining liquid.
5. Cook on low for 8 – 9 hours, shred, and add the shredded pork back into the slow cooker with the liquid.
SLAW ASSEMBLY
1. Add all of the ingredients to a bowl, mix, cool, and serve with the pork tacos!
