STEAK INGREDIENTS
8oz NY Strip
3/4 Cup Coconut Aminos
1/4 Cup Apple Cider Vinegar
1 Teaspoon Thyme
2 Teaspoons Minced Garlic
1/2 Teaspoon Rosemary
Salt and Pepper
DRESSING INGREDIENTS
2 Tablespoons Avocado Oil
1 Tablespoon Coconut or Balsamic Vinegar
1 Teaspoon Dijon Mustard
SALAD INGREDIENTS
1 Avocado Sliced
10 Asparagus Spears Cooked
10 Slices of Cucumber
1/4 Cup Red Onions Sliced
1/2 Cup Grape Tomatoes Sliced
6 Cup Lettuce Chopped
1/4 Cup Olives
Handful of Cilantro Chopped
ASSEMBLY
1. In a medium sized mixing bowl combine steak marinade ingredients. Mix well and marinate steak, preferably overnight.
2. In a small mixing bowl add avocado oil, vinegar, and mustard. Mix well.
3. Preheat the grill to High Heat roughly 550°F.
4. Place the steaks on the grill for 5 minutes, flipping only once, then grill for an additional 4 minutes on the other side for a medium rare steak.
5. Adjust cooking time based on personal preference.
6. Set aside for 10 minutes. Do not cover.
7. In a large salad bowl add lettuce, cilantro, and salad dressing. Coat the lettuce.
8. Divide the dressed lettuce into two bowls.
9. Thinly slice the steak.
10. Evenly place the sliced steak and the salad ingredients to the top of the salads and serve.
