INGREDIENTS
½ Cup Avocado Oil
1 ½ Cup Coconut Sugar
½ Teaspoon Vanilla Bean Powder
2 Cups All Purpose Flour
½ Cup Cocao Powder or Cocoa Powder
1 ½ Teaspoon Baking Soda
1 Teaspoon Himalayan Pink Salt
3 Cups Zucchini Grated
1 ½ Cups Chocolate Chunks, Hu Kitchen
ASSEMBLY
In a mixing bowl add the oil, coconut sugar, vanilla bean powder, flour, cocoa, baking soda, and pink salt. Mix well until fully combined.
Fold in the zucchini. Mix well until fully combined.
Let the batter sit for 10 minutes.
Fold in the chocolate chunks.
Grease a 9 x 13 glass baking dish with avocado oil.
Pour the batter in the baking dish.
Bake the brownies at 350F for 30 – 35 minutes.
Let the brownies cool. Slice and serve.
