CHICKEN INGREDIENTS
3 Chicken Breasts
½ Cup Avocado Oil
1 Tablespoon Lemon Juice
2 Teaspoons Garam Masala
1 Teaspoon Pink Himalayan Salt
1 Tablespoon Coconut Aminos
2 Teaspoons Coconut Sugar
SALAD INGREDIENTS
1 Honeycrisp Apple, Cut into Chunks
½ Cup Celery Diced
½ Cup Walnuts
½ Cup Greek Yogurt
3 Tablespoons Vanilla Protein Powder
4 Teaspoons Lemon Juice
2 Teaspoons Coconut Sugar
2 Teaspoons Honey
½ Teaspoon Cinnamon
INSTRUCTIONS
- Make this chicken marinade by combining all ingredients in a small bowl.
- Marinate the chicken for 8 – 24 hours.
- Heat the grill to 450F.
- Grill the chicken for 4 minutes.
- Flip the chicken and grill for an additional 4 minutes.
- Let the chicken cool, and then cut into small bite-size pieces.
- In a small bowl add the yogurt, vanilla protein powder, lemon juice, coconut sugar, honey, and cinnamon. Mix well until fully combined and smooth.
- In a large bowl add the remaining ingredients, along with the chicken. Mix well.
- Add the dressing to the chicken salad, and mix well until fully coated.
- Chill and serve with your favorite bread, pitas, or tortillas.
