INGREDIENTS
2 Cups Chopped Rotisserie Chicken
¼ Cup Blueberries Cut in Half
2 Tablespoons Chopped Fresh Cilantro
2 Large Spoonful’s of Avocado Mayonnaise (More to Taste)
1 Tablespoon Dijon Mustard
2 Tablespoons Toasted Pinenuts (Toasted Walnuts or Almonds work great too!)
1 Tablespoon Shelled Hemp Seeds
Himalayan Pink Salt and Pepper to Taste
Serves 2
ASSEMBLY
- In a medium sized mixing bowl, add chicken, blueberries, onion, cilantro, avocado mayo, mustard, salt and pepper.
- Mix well, taste to determine adding more mayo, mustard, salt or pepper.
- Top with pinenuts and hemp seeds.
