INGREDIENTS
2 Tablespoons Butter
8oz Sliced Mushrooms
½ Cup Diced Yellow Onion
8 Slices Cooked Chopped Bacon (Gluten Free, Uncured)
8 Pasture Free Range Eggs
½ Cup Heavy Whipping Cream
2 Cups Shredded Cheddar
Salt and Pepper
ASSEMBLY
- Preheat Oven to 375° Fahrenheit
- In a medium sized frying pan melt butter on medium low heat and add the mushrooms and onions. Pan fry until onions are translucent, remove from heat and let stand.
- In a large mixing bowl add bacon, eggs, cream, 1 cup of cheese, salt, pepper, mushroom and onions. Whisk everything together until mixed well.
- Add the egg mixture to a medium sized glass baking dish.
- Bake egg mixture for 20 minutes, and top with the remaining cheese.
- Continue to bake for an additional 15 minutes while the cheese melts.
