INGREDIENTS
2 Tablespoons Grass-fed Butter
2 Cups Mushrooms Sliced
½ Cup Yellow Onion Diced
½ Cup Green Pepper Diced
½ Cup Ham Diced (Gluten Free, Uncured)
8 Free Range Eggs
½ Cup Heavy Whipping Cream
2 Cups Shredded Cheddar
Salt and Pepper
ASSEMBLY
- Preheat Oven to 375° Fahrenheit
- In a medium sized frying pan melt butter on medium low heat and add the mushrooms. Pan fry 5 minutes.
- In a large mixing bowl whisk together the eggs, then combine mushrooms, onion, green pepper, ham, cream and 1 cup of cheese.
- Add the egg mixture to a medium sized glass baking dish.
- Bake egg mixture for 20 minutes, and top with the remaining cheese.
- Continue to bake for an additional 15 minutes while the cheese melts.
