CELERY ROOT INGREDIENTS
1 Celery Root Peeled and Thinly Sliced into 2” Slices
2 Tablespoons Grass-fed Butter
½ Large Yellow Onion Thinly Sliced
1 Teaspoon Minced Garlic
Himalayan Salt and Cracked Pepper to Taste
Avocado Oil to Coat Baking Dish
2 Tablespoons Green Onions Diced
SAUCE INGREDIENTS
2 Tablespoons Grass-fed Butter
1 Teaspoon Minced Garlic
1 ½ Cup Heavy Whipping Cream
¾ Cup Grated Parmesan
ASSEMBLY
- In a medium sized frying pan over medium-low heat, melt butter and add onions, garlic, salt and pepper. Fry until translucent and light brown.
- While the onions are frying, prep the sauce. In a medium sized sauce pan over medium-low heat, melt butter and add garlic and heavy cream.
- Whisk often! Once the sides of the sauce pan begin to form small bubbles, whisk in your parmesan cheese and turn to low heat.
- Continue to whisk often, and allow the sauce to thicken.
- In a medium sized glass baking dish, coat the dish with avocado oil and begin placing your celery root in layers.
- Top the celery root with the onion mixture.
- Pour sauce over your celery root and onions.
- Bake at 425° Fahrenheit for 30 minutes.
- Top with green onions and serve.
